Chicken Ideas

Hi everyone! Sorry that we have been so MIA- guess it was an understanding that it was time for spring break. With the summer months fast approaching, I am working on cleaning up my act food wise. Living in the city has really set back the progress I was making on cooking and homekeeping in general.

My goal, as expected, is to eat more lean protein and vegetables. I found a fantastic, simple recipe recently, First you saute garlic in olive oil. Saute spinach and then throw in chopped tomotoes and good, shredded parmesan cheese. It is delicious. My problem is the reality of chicken breasts every night. Chicken is relatively cheap, healthy, and boring. So my question is, what is your favorite quick preparation for chicken breasts at dinner?

i found this recipe on martha stewart a while ago. its really easy and very yummy. i took a chicken breast and slit it open horizontally. i stuffed it with some chopped up basil, sun dried tomatoes, and garlic and then put in slice of fresh mozzarella. i closed the slit in the chicken with a toothpick. then i rubbed some olive oil, salt, and pepper on top of the chicken and baked it in the oven at 450 for about 30mins. if you go to martha stewarts website you can get the exact measurements but i really just stuffed the chicken with as much of the filling as i could get in there!

do you ever try boneless skinless chicken thighs? i find that they are a nice break from the usual chicken breasts.

i usually buy a package of 6-7 fresh chicken breasts and bake them with olive oil, salt & pepper in the oven for 30 mins. on a sunday. this way i have cooked chicken for the week to put in quesadillas, stir frys, pasta, salads, etc. - neill

Boned in, chicken breast with some skin is a little different too. Much more tender and flavorful. Rubbing some olive oil, lemon or lime juice, some salt and freshly ground pepper and broiling them would be a good alternative.

My new favorite chicken recipe is to poach chicken breasts in chicken broth with tarragon leaves - then make a sauce with dijon mustard, olive oil, and tarragon leaves (and salt/pepper to taste) to drizzle over the chicken. It is a quick dish for a weeknight and is really fantastic and flavorful.
