The recession garden has been producing tomatoes in amazing quantities lately. In an attempt to not let any go to waste, we have been getting creative with tomato-centric dishes lately. This dish, adapted from a Whole Foods recipe, is one of the best we have tried. You could substitute in any fresh herb for the mint - basil, etc or goat cheese for the feta, depending on your preferences. The photos were taken before I added the balsamic reduction, but you get the idea!
